What is the TikTok crispy potato salad?

Potato salad is a classic American dish. There are a few different theories about where it first came from, some say the Spanish created it during colonization, while others say it originated in Germany, but either way, it remains a popular cookout staple today. Usually, it’s made with boiled potatoes and mayonnaise, but there are many different ways to make it, and on TikTok right now, it’s all about the smashed potatoes.

According to Stella Drivas of the TikTok account HungryHappens, whose crispy potato salad recipe has more than 963,000 likes, it’s “a crunchy and creamy new way to eat a flavor-packed potato salad.” In a follow-up recipe post on her blog, Drivas notes that the potatoes, which are boiled, smashed, and then roasted, add an extra delicious crunchy texture to the salad.

“This salad does not disappoint. All the texture and flavor will definitely please you and your dinner partners.” —Stella Drivas

The rest of the ingredients are similar to a classic potato salad: the potatoes are mixed with a creamy, refreshing dressing made with Greek yogurt and kewpie mayo.
